Here are a few I like that I haven't seen here: Professor Longhair ("The Bach of Rock") Dr. John (check out his fine 1981 solo piano record "Dr. John Plays Mac Rebbenack") Randy Newman Carole King Toni Brown of the band Joy of Cooking Neil and Bob have both played a lot of nice piano too

Professor Longhair definitely deserves a place of honor!
I love Randy Newman and Carole King too -- I've even bought books of their piano music to try to play it myself. I have to say, Randy's isn't as hard to play as it sounds. But you need big hands for all the stride stuff, and my hands aren't quite big enough!
